PEORIA HEIGHTS (WEEK) – Michael Vandy fought through COVID to finally cut the ceremonial ribbon on Water’s Edge Winery and Bistro Thursday. The new self proclaimed “urban winery” will sit atop Brienzo’s Pizza in the formerly empty retail space at Heritage Square in Peoria Heights.
The franchise winery and food concept is “different than other wineries” throughout Central Illinois said the new owner, Vandy.
“We’re going to be shipping grapes in from all across the world. Chile, Argentina, Southern California. All the grapes are going to come here. So we’re going to manufacture produce and bottle here. So the bottle label will actually say bottled and produced in Peoria Heights,” explained Vandy.
Vandy said once they’re up and running with production on August 24, Vandy expects to host bottling parties for retirements, bridal showers, birthdays, and more.
Operating hours will start from Tuesday-Thursday from 11-10 and Friday-Saturday from 11:00 AM – Midnight. They plan to add brunch hours on Sunday after getting up and running.
